Fresh Blueberry Cheesecake with Homemade Crust
Crust
Ingredients
- 1½ cups crushed graham crackers or biscuits
- ¼ cup melted butter
- 2 tbsp sugar
Directions
- Mix crumbs, butter, and sugar.
- Press into the bottom of a springform pan.
- Bake at 175°C (350°F) for about 8 minutes, then cool.
Cheesecake Filling
Ingredients
- 450 g cream cheese, softened
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla
- ½ cup sour cream or yogurt
Directions
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time.
- Mix in vanilla and sour cream.
- Pour over crust.
- Bake at 160°C (325°F) for 45–55 minutes.
