Crust

Ingredients

  • 1½ cups crushed graham crackers or biscuits
  • ¼ cup melted butter
  • 2 tbsp sugar

Directions

  1. Mix crumbs, butter, and sugar.
  2. Press into the bottom of a springform pan.
  3. Bake at 175°C (350°F) for about 8 minutes, then cool.

Cheesecake Filling

Ingredients

  • 450 g cream cheese, softened
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • ½ cup sour cream or yogurt

Directions

  1. Beat cream cheese and sugar until smooth.
  2. Add eggs one at a time.
  3. Mix in vanilla and sour cream.
  4. Pour over crust.
  5. Bake at 160°C (325°F) for 45–55 minutes.
  6. Cool completely, then chill.

Blueberry Topping

Ingredients

  • 2 cups fresh blueberries
  • 2–3 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with water

Directions

  1. Heat blueberries, sugar, and lemon juice.
  2. Stir in cornstarch mixture until slightly thickened.
  3. Cool and spoon over cheesecake.

Serve chilled for the best texture and flavor.
