Simple Beef and Vegetable Soup
Ingredients
- 500 g beef stew meat or ground beef
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 celery stalks, chopped
- 1 cup green beans or peas
- 1 can diced tomatoes
- 5–6 cups beef broth or water
- Salt, pepper, garlic, herbs
Directions
- Brown the beef in a large pot.
- Add onion and cook until soft.
- Pour in broth and tomatoes.
- Add carrots, potatoes, celery, and seasonings.
- Simmer for about 45–60 minutes until beef and vegetables are tender.
- Add green beans or peas near the end of cooking.
Optional additions
- Pasta or barley
- Corn
- Fresh parsley
- A little chili flakes for heat
