Easy Stuffed Pepper Soup
Ingredients (4–6 servings)
- 1 lb (450 g) ground beef or turkey
- 1 tablespoon olive oil (if needed)
- 1 onion, diced
- 2–3 bell peppers, diced (any colors)
- 2 cloves garlic, minced
- 1 can (14–15 oz / 400 g) diced tomatoes
- 1 can (8 oz / 225 g) tomato sauce
- 4 cups (1 L) beef or chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup cooked rice
Instructions
- Brown the meat in a large pot and drain excess fat.
- Add onion and peppers; cook until softened.
- Stir in garlic and cook for 30 seconds.
- Add tomatoes, tomato sauce, broth, and seasonings.
- Simmer for 20–30 minutes.
- Stir in cooked rice and heat through.
