Beef and Vegetable Soup

Beef soup with vegetables is a hearty, comforting meal that works well for lunch or dinner, especially on cooler days.

Simple Beef and Vegetable Soup

Ingredients

  • 500 g beef stew meat or ground beef
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 celery stalks, chopped
  • 1 cup green beans or peas
  • 1 can diced tomatoes
  • 5–6 cups beef broth or water
  • Salt, pepper, garlic, herbs

Directions

  1. Brown the beef in a large pot.
  2. Add onion and cook until soft.
  3. Pour in broth and tomatoes.
  4. Add carrots, potatoes, celery, and seasonings.
  5. Simmer for about 45–60 minutes until beef and vegetables are tender.
  6. Add green beans or peas near the end of cooking.

Optional additions

  • Pasta or barley
  • Corn
  • Fresh parsley
  • A little chili flakes for heat

Serve hot with bread, crackers, or rice.
