🥣 Easy Veggie Soup (Healthy & Comforting)

A simple, cozy vegetable soup you can make with basic ingredients and customize easily.

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 potato, diced (optional for thickness)
  • 1 zucchini, chopped (optional)
  • 1 cup green beans or peas
  • 1 can diced tomatoes (optional)
  • 6 cups vegetable broth (or chicken broth)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried oregano or Italian seasoning
  • Optional: spinach or kale at the end

🔥 Instructions

1. Sauté base

Heat olive oil in a pot. Add onion and cook until soft. Add garlic and cook 30 seconds.


2. Add vegetables

Stir in carrots, celery, and potato. Cook for 3–5 minutes.


3. Add broth

Pour in broth and bring to a boil.


4. Simmer
