Strawberry Tart
A strawberry tart is a crisp pastry shell filled with creamy custard and topped with fresh strawberries and glaze.
Ingredients
Tart crust
- 1½ cups all-purpose flour
- ½ cup butter (cold, cubed)
- ¼ cup powdered sugar
- 1 egg yolk
- 1–2 tbsp cold water
Custard filling
- 2 cups milk
- 2 egg yolks
- ¼ cup sugar
- 2 tbsp cornflour (cornstarch)
- 1 tsp vanilla extract
Topping
- Fresh strawberries (sliced)
- 2 tbsp strawberry jam (for glaze)
- 1 tbsp water
Instructions
1. Make the crust
- Mix flour, sugar, and butter until crumbly.
- Add egg yolk and water to form dough.
- Chill for 20–30 minutes.
- Roll and press into tart pan.
- Bake at 180°C (350°F) for 15–20 minutes until golden.
2. Prepare custard
- Heat milk in a pan.
- Whisk egg yolks, sugar, and cornflour.
- Slowly add hot milk while stirring.
- Cook until thick, then add vanilla.
- Cool completely.
3. Assemble
- Fill cooled crust with custard.
- Arrange strawberries on top.
4. Glaze
- Warm jam with a little water.
- Brush over strawberries for shine.
Tips
- Keep crust crisp by fully cooling before filling.
- Use fresh, firm strawberries for best texture.
- Chill before serving for clean slices.
