🍛 Slow-Cooked Spicy Beef Curry

A rich, deeply flavored curry with tender beef that falls apart after hours of slow cooking. Perfect with rice or warm naan.

🧾 Ingredients

  • 1 kg (2 lb) beef chuck or stewing beef, cut into chunks
  • 2 tbsp oil
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tomatoes, chopped (or 1 cup canned tomatoes)
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½–1 tsp chili powder (adjust to taste)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups beef broth or water
  • 1 tbsp tomato paste (optional)

Optional

  • 1 can coconut milk for a creamier curry
  • Fresh cilantro for garnish

👨‍🍳 Instructions

1. Brown the beef

  • Heat oil in a large pan.
  • Brown the beef in batches and transfer to a slow cooker.

2. Build the flavor

  • In the same pan, cook onions until golden.
  • Add garlic and ginger; cook for 1 minute.
  • Stir in curry powder, turmeric, cumin, coriander, and chili powder.
  • Add tomatoes and tomato paste, cooking for 2–3 minutes.

3. Slow cook

  • Transfer the mixture to the slow cooker.
  • Add broth and stir.
  • Cook on Low for 7–8 hours or High for 4–5 hours, until the beef is fork-tender.

4. Finish

  • Stir in coconut milk if using.
  • Taste and adjust seasoning.

5. Serve

  • Garnish with cilantro.
  • Serve with steamed rice, naan, or roti.

🔥 Tips

  • Chuck roast is ideal because it becomes very tender when slow-cooked.
  • For extra heat, add fresh chili peppers.
  • The curry often tastes even better the next day.
  • If the sauce is too thin, simmer uncovered for 15–20 minutes before serving.
