Roasted okra

🌿🔥 Roasted Okra

Roasted okra is crispy on the edges, tender inside, and much less slimy than boiled okra. It’s simple, flavorful, and great as a side dish or snack.


🧾 Ingredients

  • 500 g (about 1 lb) fresh okra
  • 1–2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika or chili powder (optional)
  • 1/2 tsp garlic powder (optional)
  • Lemon wedges for serving

👩‍🍳 Instructions

1. 🌿 Prep the okra

  • Wash and dry completely
  • Trim the stems lightly without cutting into the pods

👉 Dry okra well to reduce sliminess.


2. 🥣 Season

  • Toss okra with oil and seasonings until evenly coated

3. 🔥 Roast

  • Spread in a single layer on a baking tray
  • Roast at 220°C (425°F) for 15–20 minutes
  • Shake tray halfway through

4. 🍋 Serve

  • Squeeze fresh lemon on top before serving

💡 Tips for crispy roasted okra

  • Don’t overcrowd the tray
  • High heat helps crisp the edges
  • Use very dry okra before roasting
  • Add cornmeal for extra crunch if desired
