PINEAPPLE JUICE CAKE

Pineapple Juice Cake is a soft, moist cake flavored with sweet pineapple juice and often topped with a light glaze. It’s simple, fruity, and very tender.

🍍 Ingredients

For the cake

  • 2 cups all-purpose flour
  • 1½ cups sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 eggs
  • 1 cup pineapple juice
  • ¾ cup vegetable oil or melted butter
  • 1 tsp vanilla extract

For the glaze (optional but recommended)

  • 1 cup powdered sugar
  • 3–4 tbsp pineapple juice
  • 1 tbsp melted butter

1. Make the batter

  • Preheat oven to 175°C (350°F)
  • Mix dry ingredients in one bowl
  • Whisk eggs, pineapple juice, oil, and vanilla in another bowl
  • Combine wet and dry ingredients until smooth

2. Bake

  • Pour batter into greased baking pan
  • Bake for 35–45 minutes
  • Check with a toothpick (should come out clean)

3. Make glaze

  • Mix powdered sugar, pineapple juice, and butter until smooth

4. Finish

  • Pour glaze over warm cake
  • Let it soak in for extra moisture
