Olive Garden Zuppa Toscana Soup
This creamy soup is one of the most popular dishes from Olive Garden — loaded with Italian sausage, potatoes, bacon, kale, and a rich broth. Most copycat recipes follow the same core ingredients and cooking method. (Cooking Classy)
Ingredients
- 1 lb Italian sausage (mild or spicy)
- 4–6 bacon strips, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 medium russet potatoes, sliced thin
- 5 cups chicken broth
- 2 cups kale, chopped
- 1 cup heavy cream
- Salt and black pepper
- Optional: red pepper flakes, parmesan cheese
Instructions
- Cook bacon in a large pot until crispy. Remove and set aside.
- In the same pot, cook sausage until browned. Add onion and cook until soft.
- Stir in garlic and cook about 30 seconds.
- Add chicken broth and potatoes. Simmer 15–20 minutes until potatoes are tender.
- Stir in kale and cook 2–3 minutes.
- Lower heat and add heavy cream.
- Top with bacon and parmesan before serving.
Tips
- Spicy sausage gives it the classic restaurant flavor.
- Thin potato slices cook faster and make the soup creamier.
- Many home cooks say it tastes even better the next day. (reddit.com)
