Olive Garden Zuppa Toscana Soup

Olive Garden Zuppa Toscana Soup

This creamy soup is one of the most popular dishes from Olive Garden — loaded with Italian sausage, potatoes, bacon, kale, and a rich broth. Most copycat recipes follow the same core ingredients and cooking method. (Cooking Classy)

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 4–6 bacon strips, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 medium russet potatoes, sliced thin
  • 5 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and black pepper
  • Optional: red pepper flakes, parmesan cheese

Instructions

  1. Cook bacon in a large pot until crispy. Remove and set aside.
  2. In the same pot, cook sausage until browned. Add onion and cook until soft.
  3. Stir in garlic and cook about 30 seconds.
  4. Add chicken broth and potatoes. Simmer 15–20 minutes until potatoes are tender.
  5. Stir in kale and cook 2–3 minutes.
  6. Lower heat and add heavy cream.
  7. Top with bacon and parmesan before serving.

Tips

  • Spicy sausage gives it the classic restaurant flavor.
  • Thin potato slices cook faster and make the soup creamier.
  • Many home cooks say it tastes even better the next day. (reddit.com)
