Fettuccine Alfredo

Fettuccine Alfredo is a classic Italian-American pasta made with fettuccine noodles coated in a rich, creamy sauce.

Simple Fettuccine Alfredo (4 servings)

Ingredients

  • 12 oz (340 g) fettuccine
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup heavy cream
  • 1 1/2 cups freshly grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional: chopped parsley, grilled chicken, or shrimp

Instructions

  1. Cook the fettuccine in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. In a large skillet over medium-low heat, melt the butter and stir in the cream. Simmer gently for 2–3 minutes.
  3. Add the Parmesan cheese and whisk until smooth.
  4. Toss the cooked pasta with the sauce. Add a splash of reserved pasta water if needed to loosen the sauce.
  5. Season with salt and freshly ground black pepper.
  6. Serve immediately with extra Parmesan on top.

Tip: For the smoothest sauce, use freshly grated Parmesan rather than pre-shredded cheese.
