Fettuccine Alfredo is a classic Italian-American pasta made with fettuccine noodles coated in a rich, creamy sauce.
Simple Fettuccine Alfredo (4 servings)
Ingredients
- 12 oz (340 g) fettuccine
- 1/2 cup (1 stick) unsalted butter
- 1 cup heavy cream
- 1 1/2 cups freshly grated Parmesan cheese
- Salt and black pepper, to taste
- Optional: chopped parsley, grilled chicken, or shrimp
Instructions
- Cook the fettuccine in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- In a large skillet over medium-low heat, melt the butter and stir in the cream. Simmer gently for 2–3 minutes.
- Add the Parmesan cheese and whisk until smooth.
- Toss the cooked pasta with the sauce. Add a splash of reserved pasta water if needed to loosen the sauce.
- Season with salt and freshly ground black pepper.
- Serve immediately with extra Parmesan on top.
Tip: For the smoothest sauce, use freshly grated Parmesan rather than pre-shredded cheese.
