Cowboy Cookies (Makes about 24 cookies)
Ingredients
- 1 cup (225 g) unsalted butter, softened
- 1 cup packed brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups rolled oats
- 1 1/2 cups chocolate chips
- 1 cup chopped pecans (optional)
- 1 cup shredded coconut (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients.
- Stir in oats, chocolate chips, pecans, and coconut.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes, until the edges are golden brown.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Variations
- Add 1/2 teaspoon cinnamon for extra warmth.
- Substitute walnuts for pecans.
- Mix in raisins or dried cranberries for a fruitier version.
These cookies stay chewy for several days when stored in an airtight container.
