Ingredients

  • 2 liters full-fat milk
  • 1 cup sugar
  • 2 tbsp lemon juice or vinegar
  • 2 tbsp cream or ghee
  • ½ tsp cardamom powder
  • Chopped pistachios or almonds for garnish

Instructions

  1. Boil the milk in a heavy pan.
  2. When it starts boiling, add lemon juice slowly to curdle part of the milk.
  3. Cook on low heat, stirring often, until the mixture becomes thick and grainy.
  4. Add sugar, cream/ghee, and cardamom powder.
  5. Keep cooking until it leaves the sides of the pan slightly but still looks moist.
  6. Pour into a greased tray and flatten gently.
  7. Garnish with nuts and let it cool completely.
  8. Cut into squares and chill for best texture.

Tips

  • Use full-fat milk for the richest flavor.
  • Don’t overcook, or it becomes dry instead of creamy.
  • A little cream added near the end makes it softer.

You can also flavor it with saffron, rose water, or cocoa.
