Cinnamon Sugar French Toast Muffins

These are soft inside, slightly crisp outside, and taste like French toast in muffin form.

Ingredients

For the muffins

  • 6 slices bread, cut into cubes
  • 2 eggs
  • 1 cup milk
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 tbsp melted butter

Cinnamon sugar topping

  • ¼ cup sugar
  • 1 tsp cinnamon
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 180°C (350°F). Grease a muffin tray.
  2. In a bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and melted butter.
  3. Add bread cubes and mix gently until soaked.
  4. Fill muffin cups with the mixture.
  5. Bake for 20–25 minutes until golden.
  6. Mix cinnamon and sugar in a small bowl.
  7. Brush warm muffins with melted butter and roll or sprinkle with cinnamon sugar.

Optional Add-ins

  • Chocolate chips
  • Raisins
  • Cream cheese filling
  • Maple syrup drizzle

Serving Ideas

Serve warm with:

  • Honey
  • Maple syrup
  • Fresh berries
  • Whipped cream
