Cinnamon Sugar French Toast Muffins
These are soft inside, slightly crisp outside, and taste like French toast in muffin form.
Ingredients
For the muffins
- 6 slices bread, cut into cubes
- 2 eggs
- 1 cup milk
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 2 tbsp melted butter
Cinnamon sugar topping
- ¼ cup sugar
- 1 tsp cinnamon
- 2 tbsp melted butter
Instructions
- Preheat oven to 180°C (350°F). Grease a muffin tray.
- In a bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and melted butter.
- Add bread cubes and mix gently until soaked.
- Fill muffin cups with the mixture.
- Bake for 20–25 minutes until golden.
- Mix cinnamon and sugar in a small bowl.
- Brush warm muffins with melted butter and roll or sprinkle with cinnamon sugar.
