Biscuits and Gravy

🍽️ Classic Biscuits and Gravy

A comforting Southern breakfast featuring fluffy biscuits smothered in creamy sausage gravy.

🧾 Ingredients

For the Biscuits

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup cold milk

For the Sausage Gravy

  • 450g (1 lb) breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk
  • 1/2 tsp salt (or to taste)
  • 1 tsp freshly ground black pepper
  • Pinch of cayenne pepper (optional)

🍞 Make the Biscuits

  1. Preheat oven to 220°C (425°F).
  2. In a bowl, mix flour, baking powder, sugar, and salt.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Stir in milk just until a dough forms.
  5. Pat dough to about 2 cm (¾ inch) thick and cut out biscuits.
  6. Place on a baking sheet and bake for 12–15 minutes, until golden brown.

🥣 Make the Gravy

  1. Cook the sausage in a skillet over medium heat until browned.
  2. Sprinkle flour over the sausage and stir for 1–2 minutes.
  3. Gradually whisk in the milk.
  4. Simmer, stirring frequently, until thick and creamy.
  5. Season with salt, pepper, and cayenne if desired.

🍽️ Serve

  • Split warm biscuits in half.
  • Spoon generous amounts of gravy over the top.
  • Serve immediately.

💡 Tips

  • For extra-rich gravy, use whole milk.
  • If the gravy gets too thick, whisk in a little more milk.
  • Freshly cracked black pepper is a key flavor in traditional gravy.
