Mexican Street Corn Salad

🌽🇲🇽 Mexican Street Corn Salad (Elote Salad)

A creamy, tangy, slightly spicy corn salad inspired by classic Mexican street corn—easy to make and perfect for BBQs or weeknight meals.

🧾 Ingredients

  • 4 cups corn (fresh, canned, or frozen)
  • 2 tbsp butter or olive oil
  • ½ cup mayonnaise
  • ¼ cup sour cream (or Greek yogurt)
  • 1 cup cotija cheese (or feta if needed)
  • 1–2 tbsp lime juice
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 1 small garlic clove, minced (optional)
  • Salt & pepper to taste
  • 2 tbsp chopped cilantro
  • Optional: diced jalapeño for heat

🔥 Instructions

1. Cook the corn

  • Sauté corn in butter or oil over medium heat until lightly charred (5–8 minutes)
  • This gives the “street corn” flavor

2. Mix the sauce

In a bowl combine:

  • mayo
  • sour cream
  • lime juice
  • chili powder
  • paprika
  • garlic
  • salt & pepper

3. Combine

  • Add warm corn into the sauce
  • Mix well
  • Stir in cotija cheese and cilantro

4. Finish & serve

  • Top with extra cheese, chili powder, and lime wedges

🌶️ Flavor profile

  • creamy + tangy
  • smoky + slightly spicy
  • sweet corn balance

💡 Tips

  • Grilling the corn adds even deeper flavor
  • Add avocado for creaminess
  • Use Greek yogurt to lighten it up
  • Serve warm or chilled

If you want, I can turn this into a spicy chipotle version, a healthy low-calorie version, or a Mexican street corn pasta salad.
