Strawberry Tart

A strawberry tart is a crisp pastry shell filled with creamy custard and topped with fresh strawberries and glaze.

Ingredients

Tart crust

  • 1½ cups all-purpose flour
  • ½ cup butter (cold, cubed)
  • ¼ cup powdered sugar
  • 1 egg yolk
  • 1–2 tbsp cold water

Custard filling

  • 2 cups milk
  • 2 egg yolks
  • ¼ cup sugar
  • 2 tbsp cornflour (cornstarch)
  • 1 tsp vanilla extract

Topping

  • Fresh strawberries (sliced)
  • 2 tbsp strawberry jam (for glaze)
  • 1 tbsp water

Instructions

1. Make the crust

  • Mix flour, sugar, and butter until crumbly.
  • Add egg yolk and water to form dough.
  • Chill for 20–30 minutes.
  • Roll and press into tart pan.
  • Bake at 180°C (350°F) for 15–20 minutes until golden.

2. Prepare custard

  • Heat milk in a pan.
  • Whisk egg yolks, sugar, and cornflour.
  • Slowly add hot milk while stirring.
  • Cook until thick, then add vanilla.
  • Cool completely.

3. Assemble

  • Fill cooled crust with custard.
  • Arrange strawberries on top.

4. Glaze

  • Warm jam with a little water.
  • Brush over strawberries for shine.

Tips

  • Keep crust crisp by fully cooling before filling.
  • Use fresh, firm strawberries for best texture.
  • Chill before serving for clean slices.
