Stuffed pepper soup

Stuffed pepper soup is a hearty soup inspired by stuffed bell peppers. It combines the classic flavors of ground meat, bell peppers, tomatoes, rice, and seasonings in an easy one-pot meal.

Easy Stuffed Pepper Soup

Ingredients (4–6 servings)

  • 1 lb (450 g) ground beef or turkey
  • 1 tablespoon olive oil (if needed)
  • 1 onion, diced
  • 2–3 bell peppers, diced (any colors)
  • 2 cloves garlic, minced
  • 1 can (14–15 oz / 400 g) diced tomatoes
  • 1 can (8 oz / 225 g) tomato sauce
  • 4 cups (1 L) beef or chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cooked rice

Instructions

  1. Brown the meat in a large pot and drain excess fat.
  2. Add onion and peppers; cook until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Add tomatoes, tomato sauce, broth, and seasonings.
  5. Simmer for 20–30 minutes.
  6. Stir in cooked rice and heat through.
  7. Serve hot.

Variations

  • Use ground turkey for a lighter version.
  • Substitute cauliflower rice for a lower-carb option.
  • Add red pepper flakes for some heat.
  • Top with shredded cheese or fresh parsley.
