- 2½ pounds potatoes (Yukon Gold or russet), peeled and chopped
- 3 hard-boiled eggs, chopped
- ½ cup mayonnaise
- 2 tbsp yellow mustard
- ÂĽ cup sweet pickle relish

1. Cook potatoes
- Boil potatoes in salted water until fork-tender
- Drain and let cool slightly
2. Make dressing
In a large bowl, mix:
- mayonnaise
- mustard
- relish
- salt & pepper
3. Combine
Fold in:
- potatoes
- chopped eggs
- celery
- onion
Mix gently so potatoes stay slightly chunky.
4. Chill
Refrigerate at least 1 hour before serving for best flavor.
5. Finish
Sprinkle paprika on top before serving.
