Ingredients
For the bread
- 2 cups (250 g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup (115 g) unsalted butter, softened
- 3/4 cup (150 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup (225 g) crushed pineapple, undrained
- 1/2 cup chopped walnuts or pecans (optional)
Optional glaze
- 1 cup powdered sugar
- 2–3 tbsp pineapple juice
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate large bowl, cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla.
- Stir in the crushed pineapple.
- Gradually add the dry ingredients, mixing just until combined.
- Fold in the nuts, if using.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Optional Glaze
- Mix the powdered sugar with enough pineapple juice to create a pourable glaze.
- Drizzle over the cooled loaf.
Variations
- Add 1/2 cup shredded coconut for a tropical flavor.
- Mix in 1 tsp cinnamon for extra warmth.
- Substitute macadamia nuts for walnuts or pecans.
- Add a little lime zest to brighten the flavor.
