🧾 Ingredients

  • 450g (1 lb) fresh okra, washed and sliced into ½-inch rounds
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1/4 tsp cayenne pepper (optional)
  • 1 egg
  • 1/4 cup milk or buttermilk
  • Vegetable oil for frying

🍳 Instructions

1. Prepare the coating

In a shallow bowl, mix:

  • Cornmeal
  • Flour
  • Salt
  • Black pepper
  • Paprika and cayenne (if using)

2. Prepare the okra

  • In another bowl, whisk together the egg and milk.
  • Add the sliced okra and toss to coat.

3. Coat the okra

  • Remove the okra from the egg mixture.
  • Toss it in the cornmeal mixture until evenly coated.

4. Fry

  • Heat about 1–2 cm (½ inch) of oil in a skillet over medium-high heat.
  • Fry the okra in batches, avoiding overcrowding.
  • Cook for 3–5 minutes, stirring occasionally, until golden brown and crispy.

5. Drain

  • Transfer to a paper towel-lined plate.
  • Sprinkle with a little extra salt while hot.
