  • 4 large eggs
  • 2 tablespoons milk, cream, or crème fraîche (optional)
  • 1 tablespoon butter
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Crack the eggs into a bowl and whisk until fully combined.
  2. Stir in the milk or cream if using.
  3. Melt the butter in a non-stick skillet over low to medium-low heat.
  4. Pour in the eggs and let them sit for a few seconds.
  5. Using a spatula, gently push and fold the eggs from the edges toward the center.
  6. Continue stirring slowly as soft curds form.
  7. Remove from the heat when the eggs are still slightly glossy and soft—they’ll continue cooking from residual heat.
  8. Season with salt and pepper and serve immediately.
