Creamy Cucumber and Tomato Salad is a refreshing side dish that combines crisp cucumbers and juicy tomatoes with a tangy, creamy dressing.

Creamy Cucumber and Tomato Salad (4–6 servings)

Ingredients

  • 2 large cucumbers, sliced
  • 3 medium tomatoes, cut into wedges or chunks
  • 1/2 small red onion, thinly sliced
  • 1/2 cup sour cream (or Greek yogurt)
  • 2 tbsp mayonnaise (optional, for extra richness)
  • 1 tbsp lemon juice or white vinegar
  • 1 tsp sugar (optional)
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine the cucumbers, tomatoes, and red onion.
  2. In a separate small bowl, whisk together the sour cream, mayonnaise, lemon juice (or vinegar), sugar, dill, salt, and pepper.
  3. Pour the dressing over the vegetables and gently toss until evenly coated.
  4. Refrigerate for 15–30 minutes before serving for the best flavor.
  5. Garnish with extra dill and freshly cracked black pepper.

Tips

  • Use Greek yogurt instead of sour cream for a lighter version.
  • Remove some cucumber seeds if they are very watery.
  • Add sliced avocado or crumbled feta cheese for extra flavor.
  • Serve alongside grilled chicken, fish, burgers, or barbecue dishes.
