Creamy Cucumber and Tomato Salad is a refreshing side dish that combines crisp cucumbers and juicy tomatoes with a tangy, creamy dressing.
Creamy Cucumber and Tomato Salad (4–6 servings)
Ingredients
- 2 large cucumbers, sliced
- 3 medium tomatoes, cut into wedges or chunks
- 1/2 small red onion, thinly sliced
- 1/2 cup sour cream (or Greek yogurt)
- 2 tbsp mayonnaise (optional, for extra richness)
- 1 tbsp lemon juice or white vinegar
- 1 tsp sugar (optional)
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- Salt and black pepper, to taste
Instructions
- In a large bowl, combine the cucumbers, tomatoes, and red onion.
- In a separate small bowl, whisk together the sour cream, mayonnaise, lemon juice (or vinegar), sugar, dill, salt, and pepper.
- Pour the dressing over the vegetables and gently toss until evenly coated.
- Refrigerate for 15–30 minutes before serving for the best flavor.
- Garnish with extra dill and freshly cracked black pepper.
Tips
- Use Greek yogurt instead of sour cream for a lighter version.
- Remove some cucumber seeds if they are very watery.
- Add sliced avocado or crumbled feta cheese for extra flavor.
- Serve alongside grilled chicken, fish, burgers, or barbecue dishes.
This salad is best enjoyed the day it’s made, while the vegetables are still crisp and fresh.
