Blackberry Cobbler…

Blackberry Cobbler 🍇

A warm, sweet dessert with juicy blackberries and a soft, biscuit-like topping.

Ingredients

Filling:

  • 4 cups fresh or frozen blackberries
  • 1/2 cup sugar (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thicker filling)

Topping:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven
    • Set to 180°C (350°F).
  2. Prepare filling
    • In a bowl, mix blackberries, sugar, lemon juice, and cornstarch.
    • Pour into a greased baking dish.
  3. Make the batter
    • Mix flour, sugar, baking powder, and salt.
    • Add milk, melted butter, and vanilla.
    • Stir until just combined (don’t overmix).
  4. Assemble
    • Spoon batter over the blackberry mixture (it will spread while baking).
  5. Bake
    • Bake for 35–45 minutes until the top is golden and the filling is bubbling.
  6. Serve
    • Best served warm, optionally with vanilla ice cream.

Tips

  • Frozen berries work fine—no need to thaw.
  • Add a pinch of cinnamon for extra flavor.
  • Let it rest 10–15 minutes before serving so it sets slightly.
