Ingredients
- 2 cups cooked shredded chicken
- 6 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 small onion, diced
- 2 tbsp butter
- Salt, black pepper, thyme, and parsley
For the dumplings
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 2 tbsp melted butter
- ¾–1 cup milk
Directions
- Sauté the onion, carrots, and celery in butter until softened.
- Add the broth, chicken, and seasonings. Bring to a gentle simmer.
- Mix the dumpling ingredients just until combined.
- Drop spoonfuls of dough into the simmering soup.
- Cover and cook for 12–15 minutes without lifting the lid, until the dumplings are cooked through.
- Adjust seasoning and serve hot.
For an even creamier version, stir in about ½ cup of heavy cream or a splash of milk just before serving.
