A simple version includes:

Ingredients

  • 2 cups cooked shredded chicken
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 2 tbsp butter
  • Salt, black pepper, thyme, and parsley

For the dumplings

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tbsp melted butter
  • ¾–1 cup milk

Directions

  1. Sauté the onion, carrots, and celery in butter until softened.
  2. Add the broth, chicken, and seasonings. Bring to a gentle simmer.
  3. Mix the dumpling ingredients just until combined.
  4. Drop spoonfuls of dough into the simmering soup.
  5. Cover and cook for 12–15 minutes without lifting the lid, until the dumplings are cooked through.
  6. Adjust seasoning and serve hot.

For an even creamier version, stir in about ½ cup of heavy cream or a splash of milk just before serving.

It’s easy to customize with peas, fresh herbs, or extra vegetables, making it a favorite cold-weather meal.
