Cheesy Baked Potato Rounds

Here’s an easy, crispy, crowd-pleasing snack: Cheesy Baked Potato Rounds—golden on the outside, soft inside, and loaded with melted cheese.

🥔🧀 Cheesy Baked Potato Rounds

🧾 Ingredients

  • 3–4 medium potatoes (washed, skin on)
  • 2–3 tbsp olive oil or melted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika (optional)
  • 1 to 1 1/2 cups shredded cheese (cheddar or mozzarella)
  • Optional toppings:
    • Chopped parsley or green onions
    • Sour cream
    • Crispy bacon bits
    • Chili flakes

🍳 Instructions

1. Prep potatoes

  • Slice potatoes into 1/4-inch thick rounds
  • Pat dry (this helps them crisp up)

2. Season

  • Toss slices with olive oil/butter
  • Add salt, pepper, garlic powder, and paprika
  • Mix well so every slice is coated

3. Bake (first round)

  • Preheat oven to 200°C (400°F)
  • Place slices on a lined baking tray (don’t overlap)
  • Bake for 20–25 minutes, flipping halfway
  • They should be golden and slightly crispy

4. Add cheese

  • Sprinkle shredded cheese on each round
  • Return to oven for 5–7 minutes until melted and bubbly

5. Finish & serve

  • Add toppings like parsley, sour cream, or bacon
  • Serve hot and crispy

🥔 Result

You get a delicious baked snack version of Baked Potato—crispy edges, soft center, and gooey cheese in every bite.

💡 Tips

  • Use starchy potatoes (like Russet) for crispier edges
  • Don’t overcrowd the tray—airflow = crispiness
  • Flip carefully to avoid breaking slices
  • For extra crunch, broil 1–2 minutes at the end

If you want, I can also make:

  • Air fryer version (even faster)
  • Loaded “nacho-style” potato rounds
  • Or spicy peri-peri cheesy version 🌶️
