🍋🫐 Lemon Blueberry Loaf (Soft, Moist & Easy)
A bright, sweet loaf with fresh lemon flavor and juicy blueberries—perfect for tea time or breakfast.
🧾 Ingredients
For the loaf:
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup butter (softened)
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- ½ cup milk
- 1 cup blueberries (fresh or frozen)
Optional glaze:
- ½ cup powdered sugar
- 1–2 tbsp lemon juice
👩🍳 Instructions
- Preheat oven
- Set to 175°C (350°F)
- Grease or line a loaf pan
- Mix dry ingredients
- Combine flour, baking powder, and salt in a bowl
- Cream butter & sugar
- Beat butter and sugar until light and fluffy
- Add eggs & flavor
- Mix in eggs one at a time
- Add vanilla, lemon juice, and lemon zest
- Combine
- Add dry ingredients and milk alternately
- Mix gently until just combined
- Fold in blueberries
- Toss blueberries in a little flour (prevents sinking)
- Fold into batter carefully
- Bake
- Pour into pan and bake for 50–60 minutes
- Check with a toothpick (should come out clean)
- Cool
- Let it cool before removing from pan
🍋 Optional glaze
- Mix powdered sugar with lemon juice
- Drizzle over cooled loaf

- Don’t overmix (keeps loaf soft)
- Frozen blueberries work—don’t thaw them first
