Pineapple Quick Bread

Pineapple Quick Bread is a moist, tender loaf packed with pineapple flavor. Because it’s a quick bread, it uses baking powder and/or baking soda instead of yeast, making it easy to prepare in just over an hour.

Ingredients

For the bread

  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup (225 g) crushed pineapple, undrained
  • 1/2 cup chopped walnuts or pecans (optional)

Optional glaze

  • 1 cup powdered sugar
  • 2–3 tbsp pineapple juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla.
  5. Stir in the crushed pineapple.
  6. Gradually add the dry ingredients, mixing just until combined.
  7. Fold in the nuts, if using.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.

Optional Glaze

  1. Mix the powdered sugar with enough pineapple juice to create a pourable glaze.
  2. Drizzle over the cooled loaf.

Variations

  • Add 1/2 cup shredded coconut for a tropical flavor.
  • Mix in 1 tsp cinnamon for extra warmth.
  • Substitute macadamia nuts for walnuts or pecans.
  • Add a little lime zest to brighten the flavor.

This bread is delicious for breakfast, brunch, or as an afternoon snack with coffee or tea. 🍍🍞
