🍍 Pineapple Paradise Cake
A light, tropical cake that’s moist, fruity, and perfect for warm weather gatherings.
🧾 Ingredients
Cake:
- 2 cups all-purpose flour
- 1½ cups sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- 1 can (about 560 g / 20 oz) crushed pineapple, with juice
- 1 tsp vanilla extract
Topping:
- 225 g (8 oz) cream cheese, softened
- ½ cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Optional garnish:
- Toasted coconut
- Chopped pecans or walnuts
- Pineapple chunks
👨🍳 Instructions
1. Make the cake
- Preheat oven to 175°C (350°F).
- Grease a 9×13-inch baking dish.
- Mix flour, sugar, baking powder, and salt.
- Stir in eggs, crushed pineapple (including juice), and vanilla.
- Mix until just combined.
- Pour into the baking dish.
2. Bake
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool completely.
3. Prepare the frosting
- Beat cream cheese and butter until smooth.
- Add powdered sugar gradually.
- Mix in vanilla.
4. Assemble
- Spread frosting over the cooled cake.
- Sprinkle with toasted coconut and/or chopped nuts if desired.
