🍍 Pineapple Paradise Cake

A light, tropical cake that’s moist, fruity, and perfect for warm weather gatherings.

🧾 Ingredients

Cake:

  • 2 cups all-purpose flour
  • 1½ cups sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 1 can (about 560 g / 20 oz) crushed pineapple, with juice
  • 1 tsp vanilla extract

Topping:

  • 225 g (8 oz) cream cheese, softened
  • ½ cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Optional garnish:

  • Toasted coconut
  • Chopped pecans or walnuts
  • Pineapple chunks

👨‍🍳 Instructions

1. Make the cake

  1. Preheat oven to 175°C (350°F).
  2. Grease a 9×13-inch baking dish.
  3. Mix flour, sugar, baking powder, and salt.
  4. Stir in eggs, crushed pineapple (including juice), and vanilla.
  5. Mix until just combined.
  6. Pour into the baking dish.

2. Bake

  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool completely.

3. Prepare the frosting

  1. Beat cream cheese and butter until smooth.
  2. Add powdered sugar gradually.
  3. Mix in vanilla.

4. Assemble

  • Spread frosting over the cooled cake.
  • Sprinkle with toasted coconut and/or chopped nuts if desired.
