🥩 Prime Rib Dinner (Roasted Beef Rib Roast)

Ingredients

  • 1 bone-in prime rib roast (3–6 lbs / 1.5–3 kg)
  • 2–3 tbsp salt (kosher or sea salt)
  • 1–2 tbsp black pepper
  • 4–6 garlic cloves (crushed or minced)
  • 2 tbsp olive oil or softened butter
  • Optional: rosemary or thyme sprigs

🔥 Instructions

1. Season well (important)

  • Pat the roast dry.
  • Rub with salt, pepper, garlic, and olive oil/butter.
  • Let it sit at room temperature for ~1 hour (helps even cooking).

2. Slow roast

  • Preheat oven to 120–135°C (250–275°F).
  • Place roast bone-side down in a roasting pan.
  • Cook slowly until desired doneness:
    • Rare: 50–52°C (125–125°F internal)
    • Medium-rare: 54–57°C (130–135°F)
    • Medium: 60–63°C (140–145°F)

3. Rest the meat

  • Remove from oven.
  • Rest 20–30 minutes (don’t skip this—keeps juices inside).

4. Optional crispy crust (highly recommended)

  • Turn oven to 220°C / 425°F
  • Roast 5–10 minutes at the end OR broil briefly to brown the outside.
