🫐 Blackberry Cobbler

A classic Southern dessert—juicy berries baked under a soft, golden, biscuit-like topping.


🧾 Ingredients

🍇 Filling

  • 4 cups fresh or frozen blackberries
  • ½–¾ cup sugar (adjust to taste)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch (helps thicken juice)
  • 1 tsp vanilla extract (optional)

🥣 Topping

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup sugar
  • ½ cup milk
  • ¼ cup melted butter

👨‍🍳 Instructions

1. Prepare the filling

  • Mix blackberries, sugar, lemon juice, and cornstarch
  • Pour into a baking dish (8×8 or similar)

2. Make the batter

  • Mix flour, baking powder, salt, and sugar
  • Stir in milk and melted butter until smooth

3. Assemble

  • Spoon batter over the berries (it doesn’t need to fully cover them)

4. Bake

  • Bake at 180°C (350°F) for 35–45 minutes
  • Top should be golden and berries bubbling

🍽️ Serve with

  • Vanilla ice cream 🍦
  • Whipped cream
  • Or warm on its own

🧠 Tips

  • Frozen blackberries work just as well (don’t thaw fully)
  • Add a pinch of cinnamon for extra warmth
  • Let it rest 10–15 minutes after baking so it thickens

Blackberry is rich in fiber and antioxidants, but cobbler also contains:

  • refined flour
  • butter
